Here’s a simple way to prepare them: Ingredients: For the Sauce: 6-8 tomatillos, husked and rinsed 2-3 jalapeños (adjust based on spice preference) 1/2 onion 2 cloves garlic Fresh cilantro (a handful) Salt to taste For the Filling: 2 cups shredded chicken (you can also use cheese, beans, or vegetables) 1 cup queso fresco or shredded cheese (optional) For Assembling: 8-10 corn tortillas Sour cream and additional cheese for garnishing Instructions: Prepare the Sauce: Boil the tomatillos, jalapeños, onion, and garlic in water until softened (about 10-15 minutes). Drain and blend the mixture together with cilantro and salt until smooth. Prepare the Filling: If using chicken, you can shred cooked chicken. You can also mix in some cheese or beans to add extra flavor. Assemble the Enchiladas: Heat the corn tortillas in a skillet briefly to soften them. Place a spoonful of the filling in the center of each tortilla, roll them up, and place them seam-side down in a baking dish. Add the Sauce: Pour the tomatillo sauce over the rolled enchiladas, making sure to cover them well. Sprinkle some additional cheese on top if desired.
