Here are some of my go-to options: Caprese Skewers: Cherry tomatoes, fresh mozzarella, and basil drizzled with balsamic glaze on skewers for easy eating. Vegetable Wraps: Tortilla wraps filled with hummus, roasted veggies, and fresh greens. They’re easy to make and transport! Pasta Salad: A light pasta salad with cherry tomatoes, olives, spinach, and a lemon vinaigrette is refreshing and filling. Quinoa Salad: Quinoa mixed with black beans, corn, diced peppers, and a lime dressing adds protein and flavor. Stuffed Mini Peppers: Mini bell peppers stuffed with a mixture of cream cheese, herbs, and spices make a colorful and tasty bite.
